Each and every home game, I have the fortune of taking a different friend to accompany me for the journey. This long standing tradition has become somewhat of a competition to make the best day of our trip together. In fact there is a rating system that I use to score the day and the higher scoring friends pick first for the following years games. When the day arrives, in the very near future, they will accompany me to a home playoff game as well. NOTE: THAT DAY ARRIVED! Congrats Web and Coach! Jambalaya (not Patriot related)
jam·ba·lay·a (j¾mb -lº ) n. A Creole dish consisting of rice that has been cooked with shrimp, oysters, ham, or chicken and seasoned with spices and herbs.
Quite simply Jambalaya is symbolic for New Orleans, the home of this year's Super Bowl. Thus use of the term Jambalaya in discussions concerning the Patriots is indicative of the belief (real or merely hopeful) that the Patriots are on a course for New Orleans and that very Super Bowl. Whereas I intellectually agree with a reserved game by game approach to the season, I do delight in being a fan. As such Jambalaya is a fine rallying cry for a season that at this point is filled with promise. In appreciation of their standings and of the entertainment which I derive from such hype, I will be making a large pot of Jambalaya for each and every Patriots game. Join me on Zip's hill for a sample of this delicacy while in Foxboro or perhaps be one of the fortunate who shares it with me in my home for the remaining away games. So long as our Superbowl hopes live, Jambalaya will be available on game day. Thanks to Gene Lejeune for his assistance in my having Jambalaya. He promises his infamous Gumbo to join with me should the Patriots drive continue.
Jambalaya Recipe:
A jambalaya varies according to what the cook has to hand. It could contain seafood, ham,
poultry, sausage or a tasty mixture.
Ingredients:
3 lbs chicken portions, skinned, boned and cut into cubes
3 tbsps butter or margarine
1 large onion, roughly chopped
3 sticks celery, roughly chopped
1 large gren pepper, seeded and roughly chopped
1 clove garlic, crushed
1 tsp each cayenne, white and black pepper
1 cup uncooked rice
14 oz canned tomatoes
6 oz smoked sausage, cut into 1/2 inch dice
3 cups chicken stock
Salt
Chopped Parsley
1) Use the chicken bones, skins, onion and celery trimmings to make stock. Cover the
ingredients with water, bring to the boil and then simmer slowly for 1 hour. Strain and
reserve.
2) Melt the butter or margarine in a large saucepan and add the onion. Cook slowly to
brown and then add the celery, green pepper and garlic and cook briefly.
3) Add the three kinds of pepper and the rice, stirring to mix well.
4) Add the chicken; tomatoes, sausage and stock and mix well. Bring to the boil, then
reduce the heat to simmering and cook about 20-25 minutes, stirring occasionally until the
chicken is done and the rice is tender. The rice should have absorbed most of the liquid
by the time it has cooked.
NOTE: Zip's version has a few variations for that special enhancement.
It's great to sit by the Cheerleaders -- for morale of course.
